Our Maplewood Applewood Cheddar is hand smoked with real maple wood and apple wood chips. It takes about 12 hours to smoke one block of cheese, with careful monitoring to ensure the temperature and smoke level stays constant. It is definitely an art form! The result is a beautifully smoked cheddar, with balanced smoky flavours. Fun fact: The dark brown rind is naturally formed in the smoking process, so it is edible!
